Dark Chocolate Holiday Desserts for Health & Happiness

The holiday season certainly brings out the best in people. You may notice that the bus driver is in better spirits, stores are open later and try to accommodate our needs, stranger’s smile as they pass.


Even while things are as crazy as they are, we all seem to put a little more effort in what we are doing- myself included. Getting into the spirit of the holiday season, I dusted off my apron and decided that it is also a good time to entertain family and friends and make something extra special- to health, happiness for all the wonderful things to come in the New Year!

Orange and Ginger Dark Chocolate Lava Cakes:
Makes 12 Lava Cakes
6 eggs (3 full, 3 yolks)
200g sugar
200g butter
200g Dark Chocolate wafers
90g flour
½-1 tsp orange extract
½-1 tsp of ginger powder (or a small thumb of fresh, well minced)
  1. Melt the butter using the double boiler system, set stove top on medium-high heat. Add the chocolate wafers and stir until melted.

  2. Add sugar, flour, spices and eggs

Dark Chocolate Fondue & Fruit:
Makes about 2 cups of Fondue
3/4 cup heavy whipping cream
1 cup of bittersweet chocolate wafers, chopped
2 tablespoons Frangelico or Amaretto liqueur, optional
1/4 cup finely chopped hazelnuts or almonds, optional
Fruit for dipping
  1. Heat 1/2 cup cream in large sauce pot over moderate heat until cream comes to a low boil. Remove the pan from the heat and add chocolate. Let the chocolate stand in hot cream 3 -5 minutes to soften, then whisk chocolate together with the cream. Stir in liqueur and/or chopped nuts and transfer the fondue to a fondue pot (or set the mixing bowl on a rack above a small lit candle).

    Arrange fruit such as pineapple and berries for dipping!

    TIP: If fondue becomes too thick, stir in reserved cream, 1 tablespoon at a time, to desired consistency.
